
You need to try this hot chocolate fudge sauce for your next ice cream sundae! I’m learning how to make delicious homemade ice cream, and I realised a good scoop of ice cream needs a delicious topping.
This isn’t any boring chocolate sauce, it’s a hot fudge sauce so this is what you can expect. It’s made with both cocoa powder and semi-sweet chocolate chips which gives this sauce a deep rich chocolate flavour without being overly sweet. This recipe also calls for dark brown sugar which gives the sauce a subtle caramel flavour. When warm, the texture is a glossy and thick sauce, and as it is drizzled onto some ice cream, it slowly sets into a fudgy texture which perfectly compliments my Philadelphia-style vanilla ice cream.
Yield: approx 324ml – Fills a Bonne Maman glass jar
INGREDIENTS:
- 75g Unsalted Butter
- 75g Dark Brown Sugar
- 20g Cocoa Powder
- 150g Double Cream
- Pinch of Salt
- A splash of Vanilla Extract
- 60g Semi-Sweet Dark Chocolate Chips (or dark chocolate chopped up)

STEPS:
- Add butter and brown sugar into a saucepan. Sift in cocoa powder and add double cream
- Place the saucepan over low-medium heat and gently stir with a spatula until the butter and sugar are fully melted. Add salt and vanilla and mix thoroughly. Keep the heat low so it never boils and once it starts to steam, transfer the saucepan off the stove
- Add the semi-sweet dark chocolate chips and mix it through. Allow the residual heat slowly melt the chocolate into the sauce
- Drizzle this hot fudge sauce over ice cream and enjoy!
STORAGE:
Store the unused hot fudge sauce in a clean container and leave it in the fridge for up to 1 week. When it’s cold, the sauce will set. When you want to eat it, scoop the desired amount into a bowl and microwave it in short intervals. It will only take a few seconds for the sauce to melt and warm up.
