Philadelphia-Style Vanilla Ice Cream

This is the easiest and most beginner-friendly Vanilla Ice Cream recipe! It requires no special ingredients, just milk, sugar, cream, and vanilla. It is very simple to make, has a dairy forward flavour profile, and a great ice cream base to have.

I have a Cuisinart Solo Scoop Ice Cream Maker which is a very small/compact machine perfect for home use. This ice cream recipe is tested and developed using that machine (I bought the machine myself).


Yield: 532g of ice cream base (un-churned) which will make 2 batches in the Cuisinart Solo Scoop Ice Cream Maker.

INGREDIENTS:

  • 150ml Whole Milk, cold
  • 68g Caster Sugar
  • Pinch of Salt
  • 1tsp Vanilla Bean Paste
  • 300ml Double Cream, cold

STEPS:

  1. Place the ice cream bowl upright in the freezer for at least 24hrs
  2. Combine milk and sugar until all of the sugar dissolves
  3. Add vanilla bean paste and salt then stir to combine
  4. Add double cream and gently stir until everything is evenly incorporated
  5. Place the ice cream base into the fridge (preferably in the coldest part of your fridge) overnight
  6. Assemble the ice cream churner with the frozen bowl (I am using the Cuisinart Solo Scoop Ice Cream Maker). Start the machine, stir the cold ice cream base to ensure the ingredients are well incorporated, then slowly pour half of the ice cream base into the churner. Store the remaining ice cream base in the fridge to churn when you finish this batch!
  7. Leave it to churn for 15-20min (the more ice cream base you add to the machine, the longer it will take) and stop the machine when it reaches soft serve consistency
  8. Transfer the ice cream into a container and freeze for at least 2hrs to set and enjoy!

TIPS:

Scaling up or down: The ratio in this recipe is 1 part milk, 2 part cream, and 15% sugar. So if you need to scale the recipe up or down you can decide how much milk you need and multiply it by 2. Then add the milk and cream volume together and multiple it by 0.15 which will give you the total amount of sugar:

Example: 100ml Milk + 200ml Cream = 300ml total x 0.15 = 45g Sugar

Add Mix-Ins: When the ice cream is almost done churning, add the mix-ins at the very end so avoid over mixing.
