
The “Dot Cake” has gone super viral and it is all over my FYP! I saw so many people bake an entire cake just to make a small single serve Dot Cake replica. So to make things simpler, I created this microwave single serve version that you can easily whip up in under 15min.
The cake base is a fluffy chocolate sponge with chocolate chips covered with a layer of vanilla mascarpone whipped cream. Then of course topped with the dot sprinkles! In this recipe I also included the step to make it super flush and clean so you get that complete dot cake experience.
INGREDIENTS:
CAKE-
- 1tbsp AP/Plain Flour
- 1/10tsp Baking Powder
- 1/10tsp Baking Soda
- 1 1/4tbsp Caster/Granulated Sugar
- 1/2tbsp Cocoa Powder
- Pinch of Salt
- 1/2tbsp Vegetable Oil (any neutral oil will work, eg. sunflower, rapeseed)
- 1 1/2tbsps Milk (any milk/milk alternative will work)
- 1tbsp Chocolate Chips (optional)
MASCARPONE WHIPPED CREAM-
- 2tbsp Mascarpone Cream, room temp
- 8tbsp Heavy/Double Cream
- 2tsp Powdered Sugar
- 1tsp Vanilla Extract

STEPS:
CAKE-
- In a ramekin (10cm wide 5cm tall), add flour, baking powder, baking soda, and sugar
- Sift in cocoa powder
- Add a pinch of salt
- Add oil and mix until it reaches a sandy texture
- Gradually add milk and mix until all the milk has been incorporated and the batter becomes smooth
- Fold in the chocolate chips (optional)
- Microwave it at 900W for 1min.
- The batter will rise in the microwave and once it’s done, it will fall slightly. Place it into the freezer to cool quickly
CREAM-
- Add mascarpone cream, vanilla extract, and powdered sugar to a bowl and whisk until the mascarpone is smooth
- Add heavy/double cream and whisk until stiff peaks
ASSEMEBLE-
- Double check the cake has had a chance to cool to room temp or colder, then add the cream on top. Using a bench scraper or spatula, scrape along the top of the ramekin to create a flat surface
- Place dot sprinkles on a flat plate. Flip the ramekin upside down and press the cream into the sprinkles then flip the ramekin right side up
- Any excess sprinkles stuck to the edge can be taken off or push further into the cream with your fingers to create a clean edge
- Take a clean flat plate and place it over the sprinkles and press down. This will create a flush layer of sprinkles and that satisfying perfect layer
MAKE IT VEGAN
To make this vegan, simply replace the milk with any milk alternatives. For the cream, skip the mascarpone and use a vegan whipped cream. Brands like Elma or Oatly have vegan whipping cream that tastes incredible.
