Easy No-Bake Strawberry Cheesecake Bowl

I present to you a strawberry cheesecake in a bowl. It may be unorthodox, but I promise you, this is going to be a recipe you keep coming back to. This glorious dessert can be made in under 10 minutes with a few simple ingredients. The result is elegant, tangy, and sweet, with the smoothest cheesecake texture.

When I created this recipe, I wanted something easy to whip up because I forgot to make dessert for date night. But this ended up being one of my favorite desserts to make, even just for myself. So I made sure the ratios are easily convertible regardless of how many bowls of cheesecakes you need.

INGREDIENTS:

  • Handful of Strawberries
  • 2 Digestive Biscuits/ Graham Crackers 
  • 4tbsp Cream Cheese
  • 2tbsp Greek Yogurt
  • 2tbsp Powdered Sugar 
  • 4tbsp Double Cream/ Heavy Cream
  • A Splash of Vanilla Extract

STEPS:

  1. Slice strawberries into 4-5 thin slices
  2. Crush the biscuits into a crumb
  3. Combine cream cheese, yogurt, and sugar in a bowl and set aside
  4. In a separate bowl, combine double cream and vanilla. Whisk until it reaches medium peaks (it should hold its shape but not be fully stiff)
  5. Add the cream cheese mixture to the whipped cream then mix until homogenous. Avoid over-mixing, or else the cream will split. Transfer this mixture into a piping bag or a ziplock bag 
  6. In your chosen dessert glassware bowl, add an even layer of the biscuit crumbs to the bottom 
  7. Place the sliced strawberries against the edge of the bowl. Make sure it goes all the way around.
  8. Pipe the cheesecake mixture into the bowl. 
  9. Place a strawberry in the middle for decoration
  10. OPTIONAL STEP:dust the dessert with some powdered sugar 
  11. Let it in the fridge for at least 3hrs to set (usually I’ll leave it overnight or make it in the morning and leave it until dinner)

STORAGE TIPS:

  1. SLICING THE STRAWBERRIES: When arranging the strawberries around the bowl, you want to see the interior strawberry patterns on every slice and for each slice to be relatively the same height. To achieve this, you want to slice the edge pieces thicker while the center pieces can be sliced thinner.
  2. PIPING THE CHEESECAKE MIXTURE: The biscuit crumbs and strawberry slices need the cheesecake mixture to secure them in the bowl. If you find that the crumbs and strawberries move around when the cheesecake mixture is pipped in, try this: Place the pipping bag in the center of the bowl and relatively close to the biscuit crumbs. Place even pressure on the bag without moving the tip of the piping bag. This way, the mixture will evenly spread into the bowl and secure everything in place.
