Apple Pie Loaf Cake

Craving both pie and cake? No problem at all 😉 This is a soft and fluffy cinnamon loaf cake. It’s filled with spiced apple chunks with flavors resembling an apple pie! It’s covered in buttery and crispy streusel. And to make it extra special, it’s paired with a scoop of vanilla cream and an apple caramel drizzle.

This is one of my favorite recipes to make. It’s so cozy and warm, perfect for autumn and winter (but it’s so good, it’s worth making all year round).

pt 1: The Apples + Caramel…

INGREDIENTS:

  • 3 Granny Smith Apples
  • 2tbsp White Sugar
  • 2tbsp Dark Brown Sugar 
  • A squeeze of lemon (use about 1/4 – 1/2 of a lemon)
  • Pinch of Salt 
  • 1/2tsp Ground Cinnamon 
  • Pinch of Ground Cloves
  • Pinch of Ground Ginger (optional)
  • Splash of Vanilla Extract

STEPS:

  1. Peel and dice apples
  2. Add everything into a saucepan along with the diced apples and mix thoroughly. Transfer onto the stove and cook over low-medium heat. Stir occasionally to cook evenly
  3. The sugar will start to melt, and the juices should start to seep out of the apples
  4. When apples begin to go darker and fork-tender (but not mushy), scoop them out into a bowl to cool
  5. Leave the remaining syrup from the apple in the pot and bring to a simmer to reduce into a caramel consistency. Transfer into a separate bowl to cool. 

pt 2: The Streusel…

INGREDIENTS:

  • 50g Plain Flour
  • 50g Granulated Sugar 
  • 25g Cubed Cold Unsalted Butter

STEPS:

  1. In a shallow bowl, combine flour and sugar
  2. Add butter and rub it into the flour mixture until a crumb forms. Leave in the fridge to keep cool

pt 3: The Cake…

RREP:

  • Line a loaf tin with lots of butter, especially in the corners
  • Place a rectangular sheet of parchment paper into the center of the tin perpendicular to the direction of the tin. Make sure the edges of the parchment are sticking out. This will act as a handle that’ll make taking the cake out a lot easier
  • Pre-heat the oven to 160°C

INGREDIENTS:

  • 190g Plain Flour
  • 130g Caster Sugar
  • 1/2tsp Salt 
  • 2tsp Baking Powder 
  • 1tsp Ground Cinnamon 
  • 1 Large Egg, room temp 
  • 100ml Milk
  • 80ml Vegetable Oil
  • 1tsp Vanilla Extract
  • The diced apples and caramel from pt 1
  • The streusel from pt 2

STEPS:

  1. Dry ingredients: Combine flour, sugar, salt, baking powder, and cinnamon in a bowl
  2. In a large bowl, whisk together egg, milk, oil, and vanilla extract
  3. Add the dry and whisk until just combined
  4. Pour 1/2 of the batter into the bottom of the loaf tin. Add 2/3 of the cooled apple chunks. Make sure its evenly spread out
  5. Pour the rest of the batter over the apples then smooth it out. Add the remaining apples evenly over the top
  6. Drizzle 4-5 tsp of the apple caramel over the top and gently swirl it into the top a few times
  7. Cover everything with the streusel, spread it evenly, and slightly press it into the batter
  8. Bake at 160°C for 45-55min 
  9. When a skewer comes out clean, remove it from the tin and let it cool

pt 4: Serving…

INGREDIENTS:

  • Double Cream/Heavy Cream
  • The cake from pt 3
  • The caramel from pt 1

STEPS:

  1. Whip as much or as little of the cream as you would like. I usually go for around 150ml of cream
  2. EXTRA: if you would like a bit of flavor in the cream I recommend adding a dash of vanilla extract and some powdered sugar. BUT the cake is quite sweet so it pairs better with a simple cream
  3. Have a slice of cake at room temp or while its warm. Pair it with a scoop of cream and drizzle the caramel all over!
