Welcome to “Bento This!”
This is a fun little series where I show you how you can make desserts in any to-go container or bento box so that you can have cake anywhere, anytime!
I wanted to make a cake version of what Oreos dipped in milk tastes like, and immediately my mind thought of the Tres Leches Cake! The Triple milk and the soaked cake were the perfect representation of a dipped Oreo. And, of course, there is Oreo in every bite of this cake. The end result will give you a delicious Oreo tres leches cake layer on the bottom, followed by a layer of Oreos, then topped with an Oreo whipped cream!
INGREDIENTS:
PREP:
- 1 pack of Oreos (total of 14 Oreos)
CAKE:
- 2 Large Eggs, room temp
- 50g Caster Sugar
- 25ml Whole Milk
- Splash of Vanilla Extract
- 40g Plain (AP) Flour
- 1/2tsp Baking Powder
- Pinch of Salt
- 20g Caster Sugar
TRIPLE MILK:
- 70ml Evaporated Milk
- 60ml Condensed Milk
- 20ml Whole Milk
CREAM:
- 200-250ml Double Cream
- 1tbsp Powdered Sugar
- Splash of Vanilla Extract
PREP:
- Line a 7″ cake tin with parchment and pre-heat the oven to 175°C
- Take 3 Oreos and cut them in half. This should give you the 6 halved Oreos that will go on the top as decoration
- Take 7 Oreos and set aside. These will go between the cake and cream as a layer of Oreo
- Turn the remaining Oreos into a powder. Do this by using a food processor or adding them into a ziplock bag and smashing it with a rolling pin. You want them to be as crumby as you can get it
STEPS:
CAKE-
- Grab the eggs and separate the yolk from the egg whites. Place the yolk in a medium-sized bowl and the whites in a large mixing bowl
- To the yolk, add the 50g of sugar. Whisk with an electronic mixer until the mixture is fluffy and pale in color
- Add milk and vanilla then whisk until fully incorporated
- Add the flour, baking powder, and salt. Whisk one last time until the mixture is smooth. Set this aside
- Grab the egg whites and whisk with an electronic mixer on high speed until it is super foamy. Add the 20g of sugar and whisk until it is smooth, glossy, and holds stiff peaks (like you’re making meringue).
- Scoop 1/3 of the fluffy egg whites into the yolk mixture and fold gently to incorporate. Then pour the yolk mixture into the large bowl with the rest of the egg whites. Continue to fold gently until homogenous
- Add 2tbsp of the crushed Oreos and fold until it’s thoroughly distributed
- Pour the batter into the cake tin. Give it a tap to even out the batter then pop it into the pre-heated oven at 175°C for 25-30min. When done, a skewer should come out clean
- Let it cool completely
TRIPLE MILK-
- Combine the evaporated milk, condensed milk, and milk. Set this aside
ASSEMBLING PT1-
- Cut the cake to the size of your bento box. It should fill all of the corners but make sure to leave enough room for more Oreos and cream on top! Feel free to cut the cake into whichever shape and thickness fits your bento box best
- Poke the cake all over with a fork
- Pour 1/2 of the triple milk mixture over the entire cake, and let the milk soak in for a few minutes
- Evenly distribute the 7 whole Oreos over the cake. Then pour the rest of the milk over the Oreos. This may not require all of the milk mixture but it should soak the entire cake and all of the Oreos
- Place this into the fridge to fully absorb and set
CREAM-
- In a large bowl, combine cream, powdered sugar, and vanilla extract. Whisk until soft peaks form
- Add the rest of the crushed Oreos and whisk until stiff peaks
ASSEMBLE- FINAL PT-
- Add a thick layer of Oreo cream over the cake. Make sure to seal the cake into the box
- Use any remaining cream for decoration and add the 6 Oreo halves to the top
- Leave this in the fridge for at least 1hr to allow everything to set. Then enjoy your Oreo tres leches cake!
