Banana Bread from”Carol & The End of The World”

“Carol & The End of the World” is an amazing apocalyptic animated Netflix series. It focuses on Carol and how she deals with the idea of human extinction. This show takes a unique approach to the apocalyptic genre and explores the idea of comfort in routine and order whilst the whole world enters into chaos. In S1E3, Carol bakes a loaf of banana bread to connect to her co-workers. This is my take on it!

INGREDIENTS:

DRY-

  • 225g Plain Flour
  • 1tsp Baking Soda
  • 1tsp Salt 
  • 2tsps Ground Cinnamon
  • Sprinkle of Ground Cloves
  • Sprinkle of Ground Nutmeg

WET-

  • 3 Large Bananas, overly ripe
  • 100g Caster Sugar
  • 60g Dark Brown Sugar
  • 1 Egg
  • 25ml Milk
  • 60g Unsalted Butter, melted
  • 1tsp Vanilla Extract 

PREP:

  • Butter a loaf tin thoroughly and place a sheet of parchment paper perpendicularly into the center of the tin. Make sure the two edges are sticking out so they can act as handles for when the cake is baked, it’ll make removal a lot easier 
  • Pre-heat oven to 150°C

STEPS:

  1. In a bowl, whisk together all the dry ingredients until well combined 
  2. In a large bowl, mash up the bananas with a fork until its mostly mushy with some large chunks of banana throughout
  3. Add the rest of the wet ingredients to the bananas and whisk until combined. The butter may start to look a bit curdled, but it’s ok! 
  4. Add the dry ingredients to the wet and whisk until just combined 
  5. Pour the batter into the prepped loaf tin. Even out the top and give it a tap against the counter 
  6. Place into the oven and bake at 150°C for 50-60min. To check if it’s fully baked, insert a skewer in the tallest part of the loaf and if it comes out clean, it’s done!
  7. Let it cool for 10min, then transfer it from the tin to a cooling rack and let it cool completely

AESTHETIC TIPS:

  • To achieve the perfect split in the middle of the loaf: Take a thin slab of butter and cut it into thin strands. Place each strand of butter along the top of the batter along the center. When it’s baking, the butter will melt and keep the center from baking too quickly. This will force the loaf to rise in the center and make a perfect center split
