Easy Salmon Tacos

These salmon tacos are the perfect meal to make when you need something quick, healthy, and easy to whip up. It’s got an avocado-cilantro-and-lime sauce, a nectarine-bell-pepper-and-corn salad, rockets, and the BEST baked salmon bites!

This recipe also includes my favourite tortilla hack so you can have some extra tortilla chips to snack on!

Yield: 2 Tacos + handful of tortilla chips

INGREDIENTS:

  • 1 Salmon Fillet
  • 1tbsp Vegetable Oil
  • 1tbsp Trader Joe’s Salmon Rub (homemade dupe version written at the bottom of this recipe!)
  • 1/2 Avocado
  • 1 Lime
  • Handful of Cilantro/Coriander Leaf
  • 4tbsp Yogurt
  • Pinch of Salt
  • 1 Red Bell Pepper
  • 1 Nectarine
  • 1 can of Sweet Corn Kernel
  • 1 packet of Rocket/Arugula
  • Olive oil
  • Flakey Sea Salt
  • 2 Large Flour Tortillas (or taco shell of your choice)

STEPS:

  1. Pre-heat oven to 200°C
  2. Dice salmon into 3cm/1inch cubes. Cover them with vegetable oil and salmon rub seasoning until it’s well coated. Transfer onto a baking tray lined with parchment or aluminium foil. Pop it into the oven at 200°C and bake for 8-12min.
  3. Add avocado, the juice of 1/2 a lime, a handful of cilantro/coriander, yoghurt, and a pinch of salt into a blender. Blend until smooth
  4. Dice red bell pepper and nectarine into small cubes. Add it to a bowl along with a can of sweet corn kernels (drained). Add a drizzle of olive oil and a pinch of flakey sea salt. Toss to combine and set aside
  5. In a large bowl, add rocket/arugula, a drizzle of olive oil, a pinch of flakey sea salt, and a squeeze of lime juice. Gently massage the leaves with your hands and set aside
  6. Fold the tortilla in half, then another half to get a “triangle”. Cut along the curvature to make two small tortilla circles that will act as the taco shell and two large tortilla rings. Pop the two small circles into the oven for 1min to gently heat it.
  7. With the two tortilla rings, cut them into small rectangles and lay them on a baking tray. Bake them at 180°C for a few minutes, until the edges go golden (should take 5-10min).
  8. Assemble the tacos: Start with the two small tortillas, followed by a spoonful of the avocado lime and cilantro dressing, two scoops of the veggies, a handful of rocket/arugula, the salmon bites, and a final drizzle of the avocado dressing.
  9. When the tortilla chips are golden, let it cool so it can get crispy, and dip them in the dressing as a snack!

Trader Joe’s Salmon Rub Dupe:

If you’re like me, and currently are not in the States, you’re probably going to have a hard finding the Trader Joe’s Salmon Rub. The only reason I have it is because I was gifted them for my birthday. After reading through the ingredients, I realized that it only requires a few simple ingredients and you can make an exact replica of it at home (probably for wayyyyy cheaper too). I’ve tested this side-by-side with the Trader Joe’s version, and I will say it tastes pretty damn close.

Combine the ingredients below and you should get a very taste salmon rub:

  • 1tbsp Brown Sugar
  • 1tbsp Smoked Paprika
  • 1tsp Salt
  • 1tsp Black Pepper
  • 1/2tsp Dried Thyme
