This is a super simple spicy green onion side dish that can be used as a delicious sauce on almost anything! It’s tangy, spicy, garlic-y, salty, and oh-so delicious.

INGREDIENTS:
- 1tbsp Gochujang Paste
- 1tbsp Light Soy Sauce
- 1/2tbsp Vinegar (rice wine vinegar, or apple cider vinegar, or distilled)
- 1tbsp Sesame Oil
- Large handful of Green Onions
- 1tbsp Toasted Sesame Seeds
STEPS:
- In a small container, combine gochujang, soy sauce, vinegar, and sesame oil. Mix well.
- Wash and pat dry green onions. Slice in a diagonal to get thin oblong slices of green onions.
- Add them to the container and mix.
- Add sesame seeds and mix one last time to get the sauce evenly distributed throughout the green onions (you could eat it immediately, which is more like a Korean green onion salad).
- Leave it overnight to marinate.
- The next day, the flavours would have infused and become more of a saucy goodness.
WAYS TO EAT IT:
- Sandwich sauce. I initially made it for a sandwich meal prep. I like to spread it onto the bottom bread so that the sauce gets absorbed into the bread, and the crunchy green onion gives the sandwich more texture.
- Cold Noodle Sauce. Cook up some thin Asian noodles and wash them under cold water. Add this over and give it a good mix for a refreshing, easy, and spicy summer noodle dish.
