Sticky Soy Aubergine (Eggplant)

The dish made me fall in love with Aubergines! All you need are 4 main ingredients and you can make this savory and sweet side dish!

The middle of the aubergines gets so soft and flavorful while the surface and edges get caramelized and become this sticky goodness.

My favorite way to eat it is on some rice or a slice of bread!


INGREDIENTS:

ESSENTIAL-

  • 1 Aubergine
  • 3 tbsp Dark Soy Sauce (It’s very important to use DARK soy sauce because it is less salty and a bit thicker so it’ll give you that color and soy sauce flavor without over-salting the entire dish)
  • 2tbsp Dark Brown Sugar 
  • Olive Oil

EXTRA-

  • Pinch of Salt
  • Ground Black Pepper
  • Sesame Seeds
  • Green onions

STEPS:

  1. Pre-heat oven to 190°C and line a baking tray with parchment 
  2. Slice the aubergine into thick slices
  3. Score both sides of each slice gently with a knife to make a grid/crisscross pattern. Optional: sprinkle a pinch of salt on each side and rub it into the aubergine
  4. In a small bowl combine the soy sauce and sugar
  5. Brush it all over the aubergine and lay them on the lined baking tray 
  6. Drizzle a generous amount of olive oil. (Optional: add ground black pepper)
  7. Pop it into the oven at 190°C for 10min. Give it a flip. Then bake for another 10min. The longer you leave it, the more caramelized the edges get, so the timing for this can be adjusted to your liking as well as the thickness of your aubergine
  8. Enjoy as it is, or sprinkle on some sesame seeds and green onion for garnish
